How Did the Maya Store Their Harvest?

Storage was as central to Maya civilization as cultivation. The milpa yields a crop that must be kept dry, away from weevils, rats, and the omnipresent humidity, and that may need to feed a household or a city for months between harvests. The Maya developed an extensive repertoire of storage structures and practices, from the household ch’ulna to the civic granary of the Late Classic cities, and from the underground chultun to the plastered storehouse of the palace. The granary is also a political institution. The capacity of a city to store grain, cacao, and cloth allowed the Late Classic rulers to underwrite the redistributive feasts described in What Was on the Maya Menu During Festivals? and to maintain a standing military, as described in Warfare, Captives, and Human Sacrifice. The challenge of storage

The Maya lowlands are hot and humid for much of the year, with relative humidity often 80 to 95 percent during the rainy season. Insects, rodents, bats, birds, and fungi are all threats to stored grain. The Maya had no metal silos, no chemical fumigants, and no mechanized drying. They had to keep their grain dry, cool, and protected.

The principal threats to stored maize were:

  • Weevils (Sitophilus zeamais), the maize weevil, which can destroy a stored ear in a few months.
  • Rodents, especially the tuza (pocket gopher, Orthogeomys), the black rat, and the deer mouse.
  • Fungi, especially Aspergillus flavus, which produces aflatoxin.
  • Birds, especially the oropendola and the Montezuma’s oropendola, which take a heavy toll on the ripening grain.
  • Moisture, the principal driver of fungal growth and weevil reproduction.

The Maya had to design storage that addressed all of these threats with the available technology.

The ch’ulna

The principal household storage structure of the Maya was the ch’ulna (sometimes chulna, or chulna naah in some orthographies), a raised, thatched, rectangular granary on low stone or wooden pillars. The walls of the ch’ulna were made of vertical wooden slats or guano palm thatch, which admitted air while excluding rodents. The roof was a steeply pitched thatch of guano palm, bajau palm, or zacate grass, designed to shed the heavy rains.

The ch’ulna is the classic Maya storage structure, and it is the direct ancestor of the modern Maya troje of the Yucatán and highland Guatemala. A well-built ch’ulna could store several tons of maize, beans, and squash for up to a year, with relatively little loss to pests or spoilage. The ch’ulna is described in the early colonial dictionaries, depicted in the painted vases of the Late Classic, and reconstructed in museums across the Maya area (notably in the Parque Museo La Venta in Villahermosa and the Maya Museum of Quintana Roo).

The ch’ulna is, in some sense, a hybrid of the European granary and the tropical storehouse. The raised floor keeps the grain away from the moisture of the ground; the slatted walls admit air and discourage weevils; the thatch keeps out the rain and the sun. The ch’ulna is the principal storage technology of the Maya household.

The chultun

A second storage technology, especially important in the central and northern lowlands, is the chultun. A chultun is a bottle-shaped underground cistern, cut into the soft limestone bedrock and sealed with lime plaster. Chultuns were used for both water storage and dry storage. A typical dry chultun was a bulbous cavity 1 to 3 meters in diameter and 1 to 4 meters deep, with a small opening at the surface that could be closed with a stone slab.

The chultun was originally developed for water storage, and the chultuns of Becan, Tikal, and the central Petén are the best-known examples. The dry-storage variant developed later, perhaps in the Postclassic, and the chultuns of the Puuc region and the northern Yucatán were used to store maize, beans, and other dry goods. The chultun has the advantage of being fire-resistant, rodent-resistant, and cool, but the disadvantage of being relatively small and difficult to access.

The chultun is described in the archaeological literature of Becan by the archaeologist E. Wyllys Andrews IV, and the chultun of the Puuc region is the subject of the survey by the archaeologist George Bey and his colleagues. The chultun is closely related to the storage technology of the contemporary Maya, where chultuns are still in use in some rural areas of the Yucatán.

Cajas, trojes, and the household storehouse

In the highland Maya communities, the equivalent of the ch’ulna is the troje or caja, a small, raised, lockable storehouse, often built against the wall of the house. The troje is made of adobe, of bajareque (wattle and daub), or of wood, and it is raised on a stone or wooden foundation to keep out the moisture. The troje is the highland equivalent of the ch’ulna, and it has been the principal household storage structure in the highland Maya communities for centuries.

In the modern highland Maya, the troje is a crucial part of the food-secure household. A well-built troje can store 1 to 5 tons of maize, 0.5 to 2 tons of beans, and a smaller quantity of chiles, chía, and amaranth. The troje is the family’s insurance against a poor harvest, a drought, or a market disruption, and it is treated as a sacred space, with a small offering placed at the top of the stored grain at the harvest festival.

Cacao storage

Cacao, the prestige crop described in Cocoa, Salt, and Maya Trade Goods and in Did the Maya Really Invent Chocolate?, required special storage. The dried cacao bean is a stable product, but it is susceptible to mold, to insect damage, and to theft. Cacao was typically stored in:

  • Sealed ceramic jars of the cylinder-vase form, often with a lid. The cacao was placed in the jar, the jar was sealed with a cap of waxed cloth or a fitted lid, and the jar was set in a cool, dry corner of the house or palace.
  • Baskets of palm-leaf or huano fiber, with the cacao lined with dried banana leaves to keep out moisture.
  • Above-ground chests of wood or stone, often in a separate storeroom of the palace or the elite residence.

Cacao stores in the elite residences of the Late Classic cities could be substantial. The painted vases of the Petexbatún show jars of cacao being counted by scribes; the Bonampak murals show the distribution of cacao from a palace storehouse; and the Tulum and Punta Sur caches have yielded hundreds of cacao beans, preserved in cenote mud.

The accounting of stored cacao was a principal task of the ajk’in, the Maya scribe-priest class described in Scribes, Literacy, and Education in Maya Society and in the broader Maya Writing, Language, and Books. The painted screens and vases that depict the counting of cacao are among the most detailed visual records of the Maya storage economy.

Salt, honey, and the storage of trade goods

The trade economy described in Cocoa, Salt, and Maya Trade Goods required substantial storage capacity for salt, honey, obsidian, jade, cotton, and other goods.

  • Salt was stored in woven containers, often of palm fiber, lined with dried banana leaves and stacked in dry storerooms. The salt was a stable, dry product, and the principal risk was loss through poor packaging rather than spoilage.
  • Honey was stored in sealed ceramic jars of the mucal (honey jar) form, with a waxed lid. The honey of the stingless bee, treated in Maya Cuisine: Food, Drink, and Preparation, is more watery than Apis honey and is more susceptible to fermentation, so the storage jars were kept cool and shaded.
  • Obsidian was stored in wooden boxes or in baskets, in a dry storeroom. The principal risk was breakage.
  • Jade and other precious stones were stored in chests of wood or in the royal pib naah (the palace), in a separate, guarded room.
  • Cotton was stored in bales, in dry storerooms of the palace or the elite residence. The cotton was pressed into a standard-size bale, and the bales were counted by scribes.
  • Feathers and feathered headdresses were stored in baskets, in a dry, dark storeroom. The principal risk was insect damage.

The storage of trade goods is closely tied to the political economy of the Late Classic cities. The elite controlled the storage and redistribution of cacao, salt, honey, obsidian, jade, cotton, and feathers, and the storage technology is therefore a window on the Maya Society, Politics, and Daily Life of the period.

The civic granary

In the Late Classic cities, the storage technology was scaled up. The largest examples are the civic granaries of Tikal, Caracol, Calakmul, and the major sites of the Petén, often associated with the palace complex. The granary was a long, low building with a vaulted stone roof, a series of internal stone partitions, and plastered walls. The vaulted roof kept the rain off; the partitions divided the building into separate compartments for different commodities; the plastered walls excluded rats and other pests.

The civic granary was a public work, built by the k’uhul ajaw and his court, and it was a visible expression of royal power. The capacity of a single granary could be 50 to 200 tons of maize, plus a smaller quantity of beans, chiles, and cacao. The granary fed the royal household, the court, the standing military, and the population of the city during periods of stress. The granary was, in this sense, the state’s granary, and it was a central element of the political economy of the Major Maya Cities and Archaeological Sites.

The collapse of the southern lowland cities in the 8th and 9th centuries is associated with the collapse of the granary system. The granaries silted up, were looted, or were simply abandoned, and the city could no longer maintain the redistributive feasts that bound the court and the population. Storage in the iconography

The granary is one of the most frequently depicted structures in the Maya iconography. The painted vases of the Late Classic show ch’ulna on the palace rooftop, with the grain carefully stacked and the air circulating freely. The Bonampak murals show a final scene of celebration in which the granary is in the background, full of grain, and the ruler is shown with the k’uhul symbols of office. The stone reliefs of the Yaxchilán and Quiriguá lintels show granaries and storehouses in the palace complex. The Codex Madrid and the Codex Dresden contain almanacs of the agricultural year, with detailed imagery of the granary and the storage of cacao, honey, and salt.

Storage and the political economy of the cities

The storage of grain, cacao, and cloth was a central element of the political economy of the Major Maya Cities and Archaeological Sites. The ruler’s ability to store a large surplus in good years and to redistribute it in bad years was a critical source of legitimacy, and the granary was a visible expression of royal power. The redistributive feasts of the Late Classic, treated in What Was on the Maya Menu During Festivals?, were financed from the granary.

The collapse of the granary system is a key part of the Causes of the Classic Maya Collapse. When the southern lowland cities were depopulated in the 8th and 9th centuries, the granaries silted up, the city could no longer maintain the redistributive feasts, and the population dispersed to smaller, more resilient settlements. The recovery of the granary in the Postclassic cities of the northern Yucatán is one of the features of the Postclassic Period: Transformation and Change.

Storage in the modern Maya world

The Maya storage technology is not a museum piece. In 2024, the troje of the highland Maya and the ch’ulna of the lowland Maya were still in active use, and the modern Maya household typically stores 1 to 5 tons of maize in the troje or ch’ulna at the end of the harvest. The troje is a sacred space, with a small offering at the top of the stored grain, and the harvest festival is in part a celebration of the filled troje.

The modern troje is also a focus of the Maya agroecology movement. The recovery of the native maize landraces, treated in What is the Milpa Farming System?, is closely tied to the recovery of the troje, and the Maya-led organizations of the highland Maya have made the troje a symbol of Maya food sovereignty and cultural continuity.

Conclusion

The Maya storage system was a sophisticated, multi-component technology that combined the ch’ulna, the chultun, the troje, the ceramic jar, and the civic granary. The system allowed the Maya to store maize, beans, cacao, salt, honey, and trade goods for periods of up to several years, and to buffer the household and the city against the risk of drought, flood, or political disruption. The system is a central element of the Maya Agriculture, Food, and Cuisine and of the Maya Society, Politics, and Daily Life, and it is the foundation of the food security of the modern Living Maya: Heritage and Modern Descendants.
