What is the Milpa Farming System?

The milpa is a rotating, fire-cleared, intercropped field cultivated in a long-fallow cycle, the cornerstone of Maya agriculture for at least three thousand years. The word milpa entered Maya-area Spanish from Nahuatl milli-pan (“cultivated field”), and it is still the most widely used term for a Maya maize field. A milpero is a person who farms a milpa; the verb milpar means to cultivate one. The milpa is the practical center of the broader Maya Agriculture, Food, and Cuisine, and it is also the cultural and ritual center of the Maya Society, Politics, and Daily Life household.

Definition

A milpa is a plot of land, generally two to four hectares in active cultivation, that has been cleared from a mature secondary forest, burned, and planted with a polyculture of maize, beans, squash, and a long botanical tail of associated crops. The plot is farmed for one to three years and then allowed to lie fallow for a period typically ranging from five to twenty-five years, during which the forest regenerates. The cycle then begins again.

Three features define the milpa in its classic form:

  1. A long fallow. A milpa is not continuous cultivation. The forest fallow is the principal mechanism of soil fertility, weed suppression, and pest control, and the milpa cycle is a long-term rotation between cropping and forest.
  2. A polyculture. The milpa is never a monoculture. The classic three-sister combination of maize, bean, and squash is supplemented by chiles, chaya, amaranth, chía, root crops, and a dozen other species, each occupying a different ecological niche and serving a different household need.
  3. A fire-cleared seedbed. The use of fire to convert forest biomass to ash and to suppress weeds and pests is the principal land-preparation technology. The burn is also a ritual event, timed by the Maya Calendar System.

The milpa is best understood not as a single plot but as a landscape in which the active milpa, the recently abandoned milpa, the mid-fallow milpa, and the mature forest are all parts of the same agricultural system. A Maya household typically holds claims on a watershed or a kabil that includes all four of these elements, plus a household garden (solar or patio), a forest garden, and access to a stream or aguada.

The five steps: roza, quema, siembra, dobla, cosecha

The classic Maya milpa cycle has five named steps. The full vocabulary is Yukatek, with cognates in other Maya languages.

  1. Roza (the cut). From November to March, the milpero and household members fell saplings, girdle large trees, and clear the field. A second pass removes the smaller regrowth. The result is a field of standing deadwood and a layer of drying vegetation.
  2. Quema (the burn). In March or April, the dried vegetation is set on fire in a controlled burn. A good burn reduces the vegetation to a layer of ash two to ten centimeters thick, releasing potassium, calcium, magnesium, and phosphorus into the soil. The burn is timed by the calendar — usually in the dry-season month Sotz’ or Zip — and accompanied by offerings to the chacs (rain spirits) and the ajaw of the hill.
  3. Siembra (the sowing). With the first rains in May or June, the milpero walks the field in a grid pattern, punching a hole in the ash with a coa and dropping in a handful of maize, beans, and squash. The milpa is a polyculture, not a monoculture; a typical milpa contains 8 to 25 species in active cultivation.
  4. Dobla (the bending). As the maize matures in late summer, each stalk is bent at the first or second internode, bringing the ear down to dry in the husk. The dobla reduces bird damage and allows the ear to dry in place.
  5. Cosecha (the harvest). Over several weeks, the household harvests the maize, beans, squash, and other crops. The maize is carried to the ch’ulna, the raised granary described in How Did the Maya Store Their Harvest?. The beans are dried and threshed. The squash is cured in the sun.

The fallow

The fallow is not abandonment. A fallow milpa is a managed piece of land in which the household continues to:

  • Harvest ramón (Brosimum alicastrum) seeds for flour;
  • Tap chicle (Manilkara zapota) and allspice (Pimenta dioica);
  • Hunt deer, peccary, agouti, and turkey;
  • Gather mushrooms, medicinal plants, and firewood;
  • Maintain selectively spared cacao, allspice, and fruit trees that were growing in the milpa at the time of the cut.

In a long-fallow milpa, the household builds a pet kot, a circular or oval plot of forest around a shrine or a house, in which useful trees are favored and harvested.

The length of the fallow is the principal variable that determines whether the system is sustainable. In the pre-Columbian period, fallow lengths in the central lowlands were probably 15 to 25 years, and possibly longer in poor soils. In the 19th and 20th centuries, demographic and economic pressures reduced fallow lengths in some regions to 3 to 5 years, with predictable declines in yield and weed pressure. The recovery of long-fallow milpa in the 21st century is a focus of agroecological research in the Petén, Quintana Roo, and highland Guatemala.

The plants of the milpa

A milpa contains a long botanical tail. Beyond the three sisters, the most common species include:

  • Maize (Zea mays), usually in the form of several landraces planted together. The principal lowland races are Nal-Tel, X’meh nal, Imilla, and the dent maizes of the highland.
  • Common bean (Phaseolus vulgaris), in black, red, white, and pinto forms.
  • Squash (Cucurbita pepo and C. moschata), the k’uum and ts’ol of the lowlands and the ayote of the highlands.
  • Chiles (Capsicum annuum, C. chinense, C. frutescens), with a wide range of heat and flavor.
  • Chaya (Cnidoscolus aconitifolius), a perennial shrub of the Euphorbiaceae, with edible leaves that substitute for spinach.
  • Amaranth (Amaranthus spp.), a pseudo-cereal with edible leaves and seeds.
  • Chía (Salvia hispanica), grown for the seed, which yields an oil-rich flour and a drink.
  • Sunflower (Helianthus annuus), the native sunflower, an oil and snack crop.
  • Chipilín (Crotalaria longirostrata), a leguminous shrub with edible leaves, also a nitrogen-fixer.
  • Tomatillo (Physalis philadelphica), the small green husk-tomato of the salsa verde.
  • Tomato (Solanum lycopersicum var. cerasiforme), the wild ancestor of the cultivated tomato.
  • Jicama (Pachyrhizus erosus), a root crop of the Fabaceae.
  • Cassava (Manihot esculenta), an introduced root crop of South American origin, especially important in the wet lowlands.
  • Sweet potato (Ipomoea batatas), an introduced root crop, especially important in the Postclassic and modern periods.
  • Taro (Colocasia esculenta), an introduced root crop, especially important in the wet lowlands.
  • Achiote (Bixa orellana), a shrub cultivated for the orange-red seed of its fruit, used in the Maya Cuisine: Food, Drink, and Preparation kitchen and as a body paint.
  • A range of root and tuber crops including malanga (Xanthosoma sagittifolium) and ñame (Dioscorea spp.).

The milpa in the calendar

The milpa cycle is timed by the haab’ (365-day solar calendar) and the tzolk’in (260-day sacred calendar), both described in the Maya Calendar System and in detail in The Haab’ Solar 365-Day Calendar and The Tzolk’in: Sacred 260-Day Calendar.

The haab’ months that anchor the cycle are:

  • Sak (December-January) — the cut (roza).
  • Sotz’ (January-February) — the continued cut, with the first large trees felled.
  • Zip (February-March) — preparation of the burn.
  • Zec and Yaxkin (April-May) — the burn (quema) and the first rains.
  • Kankin (June) — sowing (siembra).
  • Ch’en (August) — early maize harvest of the X’meh nal.
  • Yax and Zac (September-October) — the principal maize harvest and the dobla.
  • Ceh and Mac (November-December) — the harvest (cosecha) and the storage of grain.

The tzolk’in is used to time the siembra and the quema within the broader haab’ framework, and to divine the outcome of the season. The Dresden Codex contains almanacs that associate specific tzolk’in days with planting, harvesting, and storage, and the colonial Books of Chilam Balam preserve much of the same calendrical lore.

The milpa is also a ritual cycle. The principal ritual moments are:

  • The k’ax k’ub offering of seed to the household shrine before the siembra.
  • The ch’a-chaak ceremony at the beginning of the rains.
  • The k’oj offering of the first fruits.
  • The hanli k’uh (food of the gods), the offering of the best of the harvest to the ancestors and the milpa spirits.

These ritual moments are not separate from the milpa cycle. They are part of the same calendar of work and devotion.

Modern continuity

The milpa is not a museum piece. In 2024, milpa farming remained the dominant form of maize cultivation across the Maya lowlands of the Yucatán Peninsula, the Petén, and highland Guatemala, supporting the food security of millions of people. The 21st-century milpa includes both traditional and modern elements:

  • Traditional: native maize landraces, the coa, the metate, the comal, the ch’ulna, the ch’a-chaak ceremony, the tzolk’in almanac.
  • Modern: a metal-tipped coa (in some regions), chemical fertilizers (selectively used), hybrid maize (controversial), credit and seed-saving programs, the recovery of heirloom seeds.
  • Adversarial: land-tenure insecurity, climate change, demographic pressure, deforestation, the spread of the Africanized bee, and the introduction of agrochemical monocultures.

The Maya milpa has been the subject of major agroecological research, including the Agroecología Maya project of the Colegio de la Frontera Sur (ECOSUR) in Campeche, the agroforestry programs of the Maya Nut Institute in Guatemala, and the milpa-and-orchard program of the Paso del Sol community in Quintana Roo. These programs have shown that a well-managed milpa can match the yield of a maize monoculture for energy, outperform it for protein, and deliver a much higher diversity of food, fiber, and ecosystem service.

The milpa’s resilience in the face of demographic and ecological change is, in part, a function of its deep entwinement with Maya identity, ritual, and the cosmovisión. It is the practical, ecological, and ritual center of the Maya food system, and it is one of the most productive and sustainable land-use systems ever developed for the lowland tropics.
