Maize, Beans, and Squash: The Three Sisters
The Maya milpa is built around three principal crops — maize (Zea mays), common bean (Phaseolus vulgaris), and squash (Cucurbita pepo and C. moschata) — that, in combination, outperform any one of them grown alone. The three-sister combination is widely known to many Indigenous nations of the Americas as the “Three Sisters” — a phrase drawn from Haudenosaunee (Iroquois) tradition — and the principle is the same wherever it is practiced. Maize (Zea mays): the staff of life
Maize is a New World grass domesticated from annual teosinte (Zea mays subsp. parviglumis) in the Balsas River valley of Mexico around 6700 BCE. Its arrival in the Maya area came early: starch grains of domesticated maize have been recovered from the floors of the Preclassic village of Cueva de los Ladrones in Belize, dated to about 4700 BCE, and from the San Andrés phase (c. 9000–7000 cal. BP) at the site of the same name in the Mexican state of Tabasco. By the Middle Formative (c. 1000–600 BCE), the Maya lowlands were growing maize in sufficient quantity to support permanent villages and the first civic-ceremonial centers. Maya maize is unusually diverse. The Yucatán lowlands, the highland Guatemala region, and the Pacific coastal plain each had (and still have) their own characteristic landraces. Some of the most important historic Maya varieties include:
- Nal-Tel — a tall, long-eared maize of the Yucatán and Petén, also a key founder of the modern Cateto race of South America.
- X’meh nal — a fast-maturing dwarf maize of the Yucatán, with small ears and high tolerance of drought.
- Imilla (K’iche’) — a soft-flour, large-kernel maize of the highland Maya, often selected to a deep red or yellow color, used for chicha and atole.
- Teosinte introgressed maizes — highland varieties carrying visible Zea mays subsp. mexicana introgression, suggesting on-going gene flow from teosinte after domestication.
- *Salvador and Tusón — older lowland races preserved in the Mamom ceramic zones and in early colonial accounts.
The high diversity of Maya maize is more than a curiosity: it is a form of risk management. The long-run ethnographic record from the early colonial Yukatek and the modern ethnobotany of the Q’eqchi’ and Mopan show that Maya farmers historically planted several landraces per household, each with different maturity, color, and resistance profiles. The result was a more stable yield than any single monoculture could provide, and the same logic applies to the addition of beans and squash to the milpa.
The Maya treated maize as more than a plant. It is the substance of the first humans in the Popol Vuh, and the Principal Maya Gods and Deities include Ixim, the maize goddess, and Yum Kaax, the lord of the forest and the milpa. The political symbolism of maize — as both a daily substance and a divine material — runs through the painted vases of the Classic period and into the calendars described in The Maya Calendar System.
Beans (Phaseolus vulgaris): nitrogen, structure, and protein
The common bean is a New World domesticate as well, with two principal gene pools: a Mesoamerican one centered on Mexico and a separate Andean one. The Maya grew and still grow the Mesoamerican pool, in the form of many landraces, of which the most prominent include:
- Vigna- or “black” beans (Phaseolus vulgaris race Mesoamerica) — small, oval, black-seeded, the standard lowland Maya bean.
- Cuban black, Pinto, and “vaina blanca” types — variously colored and patterned landraces, used both dry and as fresh-shelled beans.
- The ayocote or runner bean (Phaseolus coccineus) — a different species, grown in highland Guatemala and Chiapas, with very large, often red-and-black mottled seeds.
Beans do several things for the milpa. The most cited is nitrogen fixation: the plant forms a symbiosis with the soil bacterium Rhizobium phaseoli in the root nodules, converting atmospheric nitrogen (N₂) into ammonia, a biologically available form. The fixed nitrogen is incorporated into the bean plant, returned to the soil as root and leaf litter, and partly transferred to the associated maize. The result is a milpa that requires less added nitrogen than a maize monoculture.
In the ecological literature on the three sisters, the nitrogen contribution of beans is real but modest. Fixation rates in polyculture with maize are typically 30 to 60 kilograms of nitrogen per hectare per year, of which a fraction is left in the field after harvest. That is significant, but it is not the whole story. The bean’s climbing habit — twining around the maize stalk — is a structural support that lets the maize serve as a trellis, and this reduces the labor of building bean poles.
The bean is also a critical source of protein. A typical Maya household consumes 30 to 80 kilograms of dry beans per year, complementing the maize carbohydrate base with about 20 to 25 percent protein by weight. The combination of maize and beans is also nutritionally complete: maize is deficient in lysine, beans in methionine and cysteine, and the two foods eaten together supply a balanced amino-acid profile. This complementarity is one of the principal reasons the three-sister combination was so successful.
Squash (Cucurbita pepo and Cucurbita moschata): the ground cover
The third sister is squash, in the lowland Maya context usually the field pumpkin or calabaza (Cucurbita moschata) and the ts’ol or k’uum of the Yucatán (Cucurbita pepo). The highland Maya additionally grew other species, including the ayote and the chilacayote (Cucurbita ficifolia), a long-keeping winter squash used in sweet preparations.
Squash contributes to the milpa in three ways. First, its broad, lobed leaves spread quickly along the ground, casting a living mulch that suppresses weed germination and reduces soil moisture loss. Second, the prickly stems and leaves deter some insect pests and small browsing mammals. Third, the mature fruit is itself a major food — baked, boiled, sweetened, or used in stews and tamales. The flowers, leaves, and tender shoots are also eaten.
A fourth, less often cited, contribution is mineral mobilization. The squash root system is wide and shallow, and the plant is an effective scavenger for the potassium, calcium, and phosphorus that the burning of the milpa releases. Some of these minerals are returned to the upper soil as the leaves decompose in place at the end of the season. Modern agronomic trials at the Tropic Soils Research Station in Belize and at the Colegio de Postgraduados in Mexico confirm that the three-sister polyculture has measurably higher soil coverage and moisture retention than maize grown alone.
The squash fruit is the principal storage crop among the three. Once cured in the sun, the calabaza can be stored for six months or more. It was, in effect, a winter “back-up” food for the lean months before the early maize harvest. The seeds, toasted and ground, are also a prized food and a source of oil.
The four-crop milpa and the botanical tail
In practice, the Maya milpa is not a strict trio. It is a polyculture that often includes chiles (Capsicum annuum, C. chinense, C. frutescens), chaya (Cnidoscolus aconitifolius), amaranth (Amaranthus spp.), chía (Salvia hispanica), sunflower, chipilín (Crotalaria longirostrata), jicama (Pachyrhizus erosus), sweet potato (Ipomoea batatas), cassava (Manihot esculenta), taro (Colocasia esculenta), tomato (Solanum lycopersicum var. cerasiforme), and an array of root crops. These additions reflect several logics: a cover crop that protects the soil (chaya, sweet potato); a nitrogen fixer (chipilín); a quick-yield vegetable (chiles); a sweetener (chía); and a stored tuber (cassava, jicama, sweet potato). The “fourth sister” varies regionally, and in some highland communities may be chaya, in others amaranth, in others sunflowers. The functional logic, however, is constant: a polyculture that distributes risk and uses the field’s space and time efficiently.
Planting geometry and timing
The three sisters are not planted in random scatter. The standard Maya pattern in the lowlands is a grid of planting holes spaced roughly one to two meters apart, with two to four maize grains in each hole, two to four beans, and one or two squash seeds, dropped together. Some Maya communities plant beans separately, two to three weeks after the maize, so the maize stalk can serve as a trellis; others plant all three at once.
The reason for the different timing is partly practical — the bean may overgrow and choke the young maize if planted too early — and partly a function of the tzolk’in planting almanac. The tzolk’in, as described in The Tzolk’in: Sacred 260-Day Calendar, includes several planting days, each associated with a different crop, and the milpero may choose the day and the sequence to optimize the calendar. The first maize of the season is often planted in the haab’ month Sip, and the early-maturing X’meh nal can be harvested in about 70 days; the principal maize harvest, of the longer-maturing Nal-Tel, comes in Yaxkin to Mol.
Yields and calorie economics
How productive was the three-sister milpa? Modern agronomic trials in the Petén, Belize, and Quintana Roo, using traditional Maya landraces, report maize yields in the first year after forest fallow of 1,500 to 2,500 kilograms per hectare, with total edible calories (including beans and squash) of 6 to 9 million per hectare. A typical Maya household of 5 to 8 people required about 0.4 to 0.8 hectares of active milpa per year, supplemented by forest garden, hunting, fishing, and exchange. The system worked.
There is also evidence that the three-sister polyculture stabilizes yield across years. Maize monoculture is famously sensitive to drought; a milpa that combines maize with beans (more drought-tolerant) and squash (whose deep root system can exploit deep soil moisture) buffers the household against total failure. The resilience of the polyculture is the principal reason it persisted as long as it did.
Cultural meanings of the three sisters
The three-sister combination is not only agronomic. In Maya thought, the three are related as family: maize the elder sister, beans the middle sister, squash the youngest — a metaphor drawn from the relative order in which they mature and the different ways they “hold up” the household. The three-sister metaphor also appears in myth, most notably in the narratives of the Popol Vuh and in the painted vases of the Classic period, where the three crops are shown together on the plate of the ancestors.
In the living Maya communities, the three-sister trio remains a daily language. A Yukatek Maya greeting is Ma’alob k’iin, “good day,” but the deeper emotional register is set by the food shared on the comal — the maize tortilla, the bean stew, the squash cooked in pit-ash — and the family’s stock of seed corn, heirloom beans, and saved squash, carefully labeled and passed down.
Conclusion
The three sisters of the Maya milpa are maize, bean, and squash — three New World domesticates whose combination in a single polyculture produces a yield, a nutritional profile, and a cultural depth that none of them could produce alone. The three-sister polyculture is also the model for the larger botanical tail of the milpa, and the working kernel of the agricultural system that supported the History of the Maya Civilization and that continues to feed millions of Maya people today. The three are also, in the Maya Calendar System, markers of the sacred days of sowing and harvest, anchors of the Maya Society, Politics, and Daily Life household, and central images in the Maya Art, Architecture, and Monuments of Classic vases.
