The Milpa: Slash-and-Burn Farming

The milpa is the central agricultural institution of the Maya world. It is a rotating plot of maize, beans, squash, and a long botanical tail of intercrops, cultivated in a cycle of clearing, burning, planting, weeding, and harvest that is followed by a long fallow during which the forest returns. Despite the popular image of “primitive slash-and-burn,” the milpa is a carefully managed agroecological system that has supported dense Maya populations for at least three thousand years, and it remains the dominant form of cultivation among rural Maya farmers in the Yucatán, the Petén, and the highlands of Guatemala, Mexico, and Belize. It is one half of a paired system that includes the household forest garden; the other half is the three-sister polyculture described in Maize, Beans, and Squash: The Three Sisters.

What the word means

The word milpa entered colonial Yucatán from Nahuatl milli (“planted field”) plus pan (“place of”) and was generalized in early dictionaries to mean “cultivated field” in general, especially in the lowlands. In modern usage across the Maya area, milpa refers to any cultivated field, but most specifically to a maize-based polyculture plot in its first or second year after a forest fallow. The Yukatek Maya also use the term kool for milpa, and a milpero is a farmer of milpa. The K’iche’ Maya of the highlands use kostal, and Tzeltal Maya use tul, all of which carry the same primary sense of “our maize field.”

In the Maya Calendar System, certain haab’ months and tzolk’in days were closely associated with the milpa cycle. The dry-season months Sak and Sotz’ and the 20-day period at the end of the haab’ were set aside for cutting and burning, while Kankin and Muan (the early wet-season months) were associated with planting. The 260-day tzolk’in, described in detail in The Tzolk’in: Sacred 260-Day Calendar, was used to time the planting of seed and to forecast the success of the coming harvest through the mayejak, a divinatory almanac.

The cycle: roza, quema, siembra, dobla, cosecha

The traditional milpa cycle is described in Yukatek by five verbal nouns — roza (the cut), quema (the burn), siembra (the sowing), dobla (the bending of the maize stalk), and cosecha (the harvest). Together they describe a roughly annual cycle of work, punctuated by the longer fallow that follows.

The cut (roza)

The first stage is the selection of a plot and the cutting of its vegetation. Maya farmers traditionally choose a parcel of mature secondary forest, typically seven to twenty years old, where the tree species indicate good soil. They avoid steep slopes, the immediate floodplain of a river, and any stand where the canopy is dominated by species that indicate poor drainage. In the high Petén, the preferred fallow is corozal, dominated by the corozo or pacaya palm (Chamaedorea and Bactris spp.) and a mixture of canopy hardwoods.

The cut is hard physical labor. Saplings and small trees are felled with axe and machete; large trees are girdled — a ring of bark is removed near the base, killing the tree while leaving it standing. The standing deadwood dries in the sun and is later felled. Branches are laid out in a roughly parallel pattern to ensure even drying; this is often the responsibility of younger men of the household. In highland Chiapas and Guatemala, the cut is timed to begin in November or December and to be completed well before the first rains.

The cut is also a social event. Neighbors are often invited, and the roza is typically followed by a meal of tamales and atole, the first in a long sequence of feasting moments that structure the cycle. The burn (quema)

Once the cut vegetation has dried — typically in March or April in the lowlands — the milpero sets a controlled fire. The fire is one of the most carefully managed events of the year. A perimeter is cleared, firebreaks are scraped to mineral soil, and the burn is set on a day with the right wind and humidity. A good burn reduces most of the biomass to a layer of ash that can be several centimeters thick. This ash is a natural fertilizer, rich in potassium, calcium, phosphorus, and magnesium, and is the principal reason a freshly burned milpa can yield a good crop without manure or other inputs.

A bad burn can ruin the plot for the season. Smothered by being set too wet, blown out by a sudden wind shift, or skipping over critical patches, the field may be left half-burned and full of unconverted fuel. The next season, the milpero will likely let the field rest and try again. Burning is also a public-health and political issue in the modern Maya lowlands, where dry-season agricultural burns sometimes escape into mature forest, and a number of states and communities have introduced burning permits, firebreaks, and a regulated burning calendar.

Fire and the milpa are not opposed in Maya thought. The burn is a form of purification that returns nutrients to the soil, prepares the seedbed, and is also a ritual event. In highland communities, the fire is often lit at a named day in the tzolk’in and accompanied by prayers to the ajaw (lord) of the hill and the chacs (rain spirits), the same deities described in Principal Maya Gods and Deities.

The sowing (siembra)

Planting begins with the first reliable rains, usually in May or June in the central lowlands and somewhat later in the highland and northern Yucatán sequences. The milpero, working with a coa (pointed digging stick) and often a machete, walks the burned field in a grid pattern. At each point, the coa punches a hole in the ash and into the soft earth, and seed is dropped in: typically five to seven maize grains, four to six common beans (Phaseolus vulgaris), and one to two squash seeds, in the classic three-sister combination.

Seed is selected from the previous harvest. Maya farmers keep the largest and best-formed ears, the seeds from the middle of the ear, and a stock of multiple landraces — the giant Nal-Tel, the small-grained imilla, the dent maizes — to hedge against the failure of any one. The work of seed selection is partly an everyday agronomic task and partly a deeply cultural one, connected to the Maya concepts of way (the spirit-animal companion) and ch’ulel (the vital essence).

A single household can plant two to four hectares of milpa over the course of several weeks. Beans are sometimes planted a few weeks after the maize, once the maize has sprouted, so that the bean tendrils can find a stalk to climb. The seed is covered lightly with ash, and the field is left to germinate.

The weeding and tending

In the weeks after planting, the milpa requires weeding. Weeds are the principal yield-limiting factor in the first year of a milpa, and a household will typically pass through the field with the coa two to four times before the maize canopy closes. Some weeds are tolerated for their food or medicine value — chaya, epazote, chipilín (Crotalaria longirostrata), amaranto — and the milpa remains a polyculture rather than a monoculture.

The milpa is also vulnerable to pests. Deer and collared peccaries browse the young maize; tuza pocket gophers (Orthogeomys) burrow into the root zone; raccoons and gray foxes raid the ears at maturity. Birds, especially the oropendola and Montezuma’s oropendola, take a heavy toll on the ripening grain. Maya farmers traditionally scattered milpa defenses such as scarecrows, the scent of human hair, and the loud calls of children; in the modern period, chemical pesticides and rodenticide baits have displaced some of these methods, with environmental consequences that have been documented in highland Guatemala and the Yucatán.

The bending (dobla) and harvest (cosecha)

As the maize matures, in August or September in the central lowlands, the ears reach their full size and the husks begin to dry. In the dobla, the milpero walks the field and bends each stalk over at the first or second internode, leaving the ear pointing downward. The bending both reduces bird damage and brings the ear into a micro-environment in which the husk and grain continue to dry in place. The grain reaches harvestable dryness in two to four weeks.

The harvest is the largest single event of the agricultural year. Households, sometimes reinforced by neighbors, harvest the maize over several weeks. The traditional method is to break each ear from the husk in the field and pile the ears in baskets for transport to the ch’ulna, the raised granary whose details are given in How Did the Maya Store Their Harvest?. Beans are uprooted, dried, and threshed; squash is cut and stored.

A first-year milpa is by far the most productive. A second-year milpa (cañaveral or doñera in some areas) yields significantly less, partly because the residual fertility of the ash is depleted, and partly because weed pressure rises sharply. By the third year, most lowland milperos have rotated to a new plot. The old field is left to fallow, and the long process of forest regeneration begins.

The long fallow

The fallow is not a passive abandonment. The milpero continues to use the abandoned field for several years. Some households plant cañaverales, small cane or banana patches, in the lower-lying edges of the milpa. Others manage the fallow as a pet kot, a managed forest garden in which useful trees — ramón (Brosimum alicastrum), chicle (Manilkara zapota), allspice (Pimenta dioica), wild relatives of domesticated fruit trees — are spared during clearing and selectively harvested. The fallow is also a source of honey, mushrooms, medicinal plants, and the small-scale hunting of deer and other game.

The length of the fallow is the principal variable that determines whether the milpa system remains sustainable. In the densely populated 19th and 20th centuries, fallow lengths in many parts of the Yucatán Peninsula and highland Guatemala collapsed to as little as three to five years, leading to declining yields, weed invasion, and erosion. The historical 15-to-25-year fallows allowed the soil to recover its organic matter, its mycorrhizal communities, and its stocks of weed-suppressing forest litter. The long fallow is, in effect, the Maya solution to the problem that European plow agriculture solved only with manure, rotation, and eventually chemical fertilizer.

The role of the family

The milpa is fundamentally a household enterprise, although community labor and exchange often supplement it. A Maya household — typically an extended family living in a single compound — opens a milpa each year that reflects the size and labor capacity of the family. The senior male typically holds the primary claim on the parcel, but the milpa’s work is shared among spouses, sons, daughters, and sometimes in-laws. A man without a working-age son may be unable to open a milpa, which is one of the social pressures toward the formation of joint households.

Men do the heavy work of felling trees, burning, and fencing. Women plant, weed, harvest, and process the grain. Children begin to participate from an early age, learning seed selection, the rhythm of the planting calendar, and the ritual formulas that accompany the work. The milpa is, in this sense, a school as well as a field, and the transmission of milpa knowledge across generations is one of the most important forms of cultural continuity among living Maya. The milpa in the sacred calendar

The milpa was not merely an economic activity but a ritual obligation and a cosmological obligation. The 260-day tzolk’in was the principal ritual calendar, and at least four of its 20 day signs are directly associated with agricultural work: Ch’en (the well, a day for offerings to water spirits), Kib’ (the wax or new life, a day for sowing), K’an (the seed, associated with abundance), and Muluk (the water, a day for rain). The Dresden Codex contains a series of agricultural almanacs — the k’al agricultural tables — that map specific tzolk’in days to specific agricultural activities, with prognostication of good or bad outcome. A household head might consult a j’men (ritual specialist) before opening a new milpa, to choose an auspicious day, to set the sequence of offerings to the chacs and the ajaw of the hill, and to read the coldness or warmth of the year. The result is that a milpa, in Maya terms, is not “a piece of land” but a place — a locus of human-divine interaction, a partnership between the milpero and the spirits of the forest, the rain, the soil, and the maize itself.

Modern continuity and the milpa today

The milpa is far from a relic. In the Yucatán Peninsula, in highland Chiapas, in the Petén, and in parts of Belize and Honduras, the milpa is still the principal source of maize and a major source of beans and squash for millions of Maya people. Modern milpas are increasingly interpenetrated with cash crops (henequen in the 19th-century Yucatán, coffee and cardamom in the highland Maya lowlands), with wage labor in the service economy, and with government and NGO programs that sometimes promote hybrid maize, agrochemicals, and mechanized tillage.

In response, Maya communities have organized to defend the milpa as a cultural and ecological institution. The koolel kab (forest-council) tradition in Quintana Roo, the campesino a c experiment in the Petén, and the movements to recover native maize landraces in Guatemala and Chiapas are all contemporary expressions of a continuous milpa heritage. The most ambitious of these efforts connect the milpa to the wider Maya cosmovisión and the calendar, recovering and adapting centuries of accumulated agronomic knowledge.

The milpa’s ecological role is also recognized. As a forest-based system with a long fallow, the milpa maintains a substantial forest cover across much of the Maya lowlands and provides habitat for game, pollinators, and forest trees. Conclusion

The milpa is the keystone of Maya food production. Its cycle of roza, quema, siembra, dobla, and cosecha organized a dense and historically sustainable agriculture in environments that the 19th-century tropics were thought to be unable to support; its long fallow maintained soil fertility and forest cover; and its integration with the tzolk’in and with the household economy made it a vehicle of cultural transmission as well as calories.
